Healthy Gourmet: Portobello Mushroom Burgers


Portabello burgers are a healthy alternative to heavy, cholesterol laden beefy burgers. With 30 calories to beef's 230 (3 oz) and no fat, the mushroom makes a fab meaty stand in. Additionally, replacing lettuce with spinach adds a wealth of vitamins and antioxidants                                  

Preparation


1. Rinse mushrooms, onion and spinach.
2. Separate stems from mushroom caps.
3. Cut the onion and mushroom stems into thin slices.
4. Slice the cheese and tomato.

Cooking


1. Preheat the oven to 350 degrees. You will roast the garlic for 8-10 minutes until soft, and then separate.

Lubricate a pan with either a thin layer of nonstick spray or olive oil.

Place the mushroom caps, stems and heap the onions into the pan. Drizzle mushrooms with the balsamic vinegar and the onions with Sauvignon Blanc. (The flavor will impart on both, but by drizzling this way, you will reduce how dark your onions become.) Cover and cook over low heat for 10-12 minutes.

Place some spinach leaves on rolls, and your cheese slices on the spinach. Add warm onions and top with Portobello caps. 5. Use remaining spinach to create small salads. Top with remaining onions, mushroom stems, garlic and the tomato slices. If desired, add a small portion of balsamic vinegar.
